Lunch Box / Lemon curd tarts

Ingerdients:
7 pre cooked tart bases
5eggs
1 cup of castor sugar
zest of 3 lemons
3/4 cup of lemon juice
160g of cold butter

Method: Real easy
Put lemon juice, zest, sugar and eggs in a bowl
Slowly heat it over a double boiler
once it is thick enough that you can wipe the back of a wooden spoon and it doesnt run/ or eggs start to coagulate take it off the heat
wait 2-3 mins then add your butter
once all the butter is melted strain out the zest and lump then pour into tart shells

refrigerate until set

serve with cream Chantilly and some mixed berries

you can mix it up and put spaghetti or baked beans in there

This baby kept me alive for about 3 years while at Uni.... and I must admit I still hook into it occasionally now!

Ingredients...

Cook your 2 minute noodles for 2 minutes.... carefully lay out 2 slices of bread .... using a fork slap your noodles across the bread.... for extra kick save some of the chicken flavour sachet and sprinkle it directly onto the noodles post bread application.... with care smash the top piece of bread onto the sandwich raise with your hands and eat.

Expect noodles to slip out and fall all over the coach as you eat. If you grab them within 5 seconds they are still good to eat as long as they don't make their way in between the cushions in which case they must stay there for eternity as a reminder of your horrible lazy lifestyle.

Some of these recipes are what i use at work and a few contain "Asian Veg"
so if i make reference to it you will know what i mean

Bean Sprouts/shoots(depends what u wanna call it)
red capsicum
spring onion
coriander/solantro(again depends what u call it)
carrot

firstly de-flesh the capsicum> cut each side off then lay it flat on the bench, then cut it in half going horizontal to remove the inner flesh and have mainly the outside left - this give a better texture,look and taste compared to eating the inside parts
julienne the carrot and capsicum
slice the spring onion thinly on a slight angle
roughly chop the coriander
then mix it all together


it can be used as an accompaniment with curries,soups or stir frys
you can even put it into pasta,stir frys and other things

Well the first one had to be muffin related :D

Ingredients

3 cups self-raising flour
3 tablespoons cocoa powder
1½ cups brown sugar
200 g choc chips
1½ cups milk
120 g butter, melted
2 eggs, beaten

Method

Sift flour and cocoa.
Add sugar and choc chips, stir.
Add milk, butter and eggs. Stir until just combined.
Spoon into muffin tin 3/4 full.
Bake at 180°C for 20-25 minutes.

So simple yet so good

It has been well over due and i have been quite lazy in setting this up but now it is time for the customary food section



As a chef(actually a cook but i like to say chef :P) it is my duty to share with other my knowledge and expertise to make everyone enjoy food as much as i do

So if you have any recipes please post them in their own thread appropriately named so others can find them. No matter how simple, intricate, home style or up-market please post them here



I will try to put a new recipe up every few days
